Middle Eastern Potato Tomato Sauce Casserole

A tasty recipe for your palate.

What you need:
4-6 potatoes, peeled and sliced thin
2 tablespoons margarine, I like Organic Earth Balance
2-3 cans of tomato sauce
1 small onion, chopped
1 1/2 teaspoon cinnamon
1 1/2 teaspoon allspice
Salt and pepper, to taste
Parsley, optional

What you do:
1. Preheat oven to 350 degrees and grease casserole pan and set aside. Sauté onion in margarine. Add 1 teaspoon of cinnamon and 1 teaspoon of allspice.
2. Add 1/2 teaspoon of cinnamon and 1/2 teaspoon of allspice to each can of tomato sauce. Add salt and pepper to taste to each can of tomato sauce.
3. In the casserole pan, layer tomato sauce (with seasonings), then potatoes, then sautéed onions, then tomato sauce -then potatoes, tomato sauce, onions, etc. End casserole with a lot of tomato sauce and onion mixture on the top.
4. Bake for at least an hour or until the potatoes feel soft. Can be served with plain vegan yogurt and/or plain rice. For looks - you can sprinkle chopped parsley on top.
