Shabbos Lunch Chickpea Salad

If you have a vegetarian or vegan coming for shabbos lunch, this will make a nice, light entree for them and it's easy for you to prepare. It is adapted from the "Where's-The-Tuna Salad Sandwich" recipe from Better Than Peanut Butter & Jelly: Quick Vegetarian Meals Your Kids Will Love! By Marty Mattare, Wendy Muldawer

 

Simply Mix together in a bowl:
2 Cans of chickpeas Rinsed, drained and mashed lightly with a fork
1/2 cup celery, finely chopped
1/2 cup onion finely chopped (I recommend sweet onion if you can get it)
1/2 cup shreaded carrots
6-8 tablespoons lemon juice
4 tablespoons mayonaise
2 tablespoons dried parsely
1 sheet of nori crumbled into small pieces (this gives it a delicious flavor!)

Chill for the flavors to meld and enjoy!
