1/3 cup raw cashews
1 cup frozen unsweetened strawberries, thawed and drained
½ cup strawberry juice (drained from the strawberries)
½ teaspoon salt
1 tablespoon lemon juice
5 tablespoons honey
1 12-ounce package firm tofu
1 teaspoon vanilla
Blend all ingredients in a blender. Chill and serve with fresh chopped fruit of your choice.
